Spinach Pie Le Grand Fromage

Here's a bonus recipe - courtesy of Cook's Corner.

2 pkgs 10 oz frozen chopped spinach, defrosted and well-drained

1 large onion, minced

½ C butter or oleo

½ tsp salt

¼ tsp pepper

¼ tsp nutmeg

1 clove of garlic, minced

1 ½ C shredded Cheddar cheese

1 egg, well beaten

½ lb Semi soft cheese like Havarti or Monterey Jack cut in wide strips

Preheat oven to 375 degrees. While spinach is draining, saute the onion in butter and add defrosted spinach along with salt and pepper, nutmeg and garlic. Spoon ½ spinach mixture into and eight-by-nine-inch buttered pie plate. Shred cheddar cheese on top and cover with remaining spinach. Spoon egg evenly over top. Add strips of cheese of your choice on top. Bake until spinach is piping hot and cheese is melted, about 35-40 minutes. Makes 6 to 8 servings.

This pie makes everyone a believer in Popeye's favorite! This pie goes together quickly with ingredients most of us have on hand. This is one of my go to dinners or a great brunch dish. The name of this is a bit fancy with the French, which means in my translation means lots of cheese. I am sure my French teacher would be proud of this translation effort. Enjoy. LW
