Recipes from Cook's Corner

Cook's Corner provides great recipes in each issue of the Stigler News-Sentinel.

 

Chilled Avocado soup

2 ripe avocados, halved and pitted
3/4 C buttermilk
1/2 C plain yogurt
2 Tbsp fresh lime juice
1 1/2 Tbsp chopped seeded jalapeño chili
1/2 tsp chili powder
1/2 C canned chicken broth
Chopped red onion

Scrape avocados from skin into processor. Add buttermilk and yogurt; puree until smooth. Mix in lime juice, jalapeño and chili powder. With machine running, blend in 1/2 C broth. Season with salt and pepper. Chill soup until cold. (Can be made 1 day ahead. Cover and keep chilled.)
Thin the soup with more broth, if desired. Spoon into bowls. Sprinkle with onion.

It used to be that avocados were only available at certain times of the year. Now they seem to be available many times during the year. This is a delicious and colorful cold soup. Do not heat as its flavor changes to a very unpleasant taste. I know this from experience.

 

Bombay Sliders W/Garlic Curry Sauce

Garlic Curry Sauce
1 C mayonnaise, divided
6 1/2 tsp curry powder, divided
1 1/2 Tbsp plain yogurt
1 1/2 Tbsp. ketchup
1 garlic clove, minced

Mini Burgers
2 lb ground turkey
6 Tbsp chopped cilantro
1/4 C minced green onions
2 Tbsp mined peeled fresh ginger or  2 tsp dried ginger (optional)
2 tsp ground cumin
3/4 tsp hot chili powder or paprika
1 tsp salt
12 small dinner rolls, cut in half and lightly toasted

Mix 3/4 C mayonnaise, 2 1/4 tsp curry powder, and next 3 ingredients in small bowl for sauce. Let stand at room temperature while preparing sliders.
Place turkey, next 6 ingredients, remaining 1/4 C mayonnaise, and 4 tsp curry powder in large bowl. Mix with fork or hands just until blended (do not over mix). Divide mixture into 12 equal portions. Using wet hands, form each portion into patty about 1/2 inch thick.
Preheat broiler or heat 1 Tbsp oil in heavy skillet over medium high heat. If broiling patties, brush rimmed baking sheet with 1 Tbsp oil and arrange patties on sheet. Broil (or cover patties in skillet and cook in batches) until cooked through, pressing patties down lightly with spatula before turning over, about 3 minutes per side (or 4 minutes per side if cooking in skillet).
Place patties on bottom halves of rolls, top each patty with sauce. Cover with roll tops. Place 3 sliders on each of 4 plates and serve.

Dinner rolls work well as buns for these mini burgers. Allow three burgers per person and top with tomato, red onion and cucumber slices. These burgers have some unusual flavors that are sure to please some. Enjoy. LW
