Recipe - White Bean & Cheddar Dip

Looking for a really good snack for this weekend? Try this special recipe, which is provided by Lee Williams

White Bean & Cheddar Dip

1 can (15 oz) white beans, drained and rinsed

1/3 C low-sodium chicken broth

1 garlic clove, minced

½ tsp cumin

1 C shredded cheddar cheese

Preheat oven to 375 degrees. Combine the beans, chicken broth, garlic, and cumin in a blender. Process until smooth. Add ¾ C of the grated cheese and blend until combined. Place the mixture in an oven-safe baking dish. Sprinkle the remaining ¼ C cheese over the top. Bake in an oven for 15 minutes.

Serve with pita chips, crackers, tortilla chips or fresh vegetables.

Beans are one of the oldest plant foods known to man and an excellent source of protein. This is a great snack that the whole family can enjoy.
