Bonus recipe: Peas almondine
Here's another bonus recipe from Cook's Corner.
2 lbs peas, shelled or frozen
2/3 C chopped bacon
¼ C minced onion
½ C slivered almonds
½ C heavy or whipping cream
In a medium saucepan over medium heat, in one-inch boiling water, heat peas and two tsp salt to boiling; cover and cook five minutes drain. In medium skillet over medium heat, fry bacon and onion until lightly brown. Add peas, almonds and salt to taste; cook until heated through. Stir in cream. Serve immediately in individual dishes.
This is quick and easy and good with fresh as well as frozen peas. Enjoy. LW
